Course 1:

* West-Coast seafood chowder

* Fresh mozzarella and tomato, with basil oil, sourdough crostini, balsamic syrup, and pickled red onion

* Pulled pork-belly springrolls with apricot pear ginger dipping sauce

 

Course 2:

* Wild BC salmon grilled on alderwood BBQ with tomato basil risotto, charred asparagus, and spiced lemon emulsion

* Pork tenderloin with organic apple cider chili brine, pan roasted with apple bacon demi and Yukon gold mashed

* Short ribs, slow-braised Alberta beef, with Yukon gold mashed, and natural pan jus

* Vegan organic French Dupuy Lentils with crisp papadom, oven-dried grape tomatoes, and roasted curried cauliflower

 

Course 3:

* Apple rhubarb cobbler, brown sugar rolled oat topping, sour cream ice cream

* Crème Brule in an ever-changing flavor

* Cinnamon poached pear, warm pecan brioche pudding, butterscotch rum sauce
